Southern Bluefin Tuna is the world most sustainable luxury food. 
Botanical Name : Thunnus Maccoyii – also known as Thon Rouge Du Sud, Tonno and Atun.
The Southern Bluefiin Tuna is amongst the most highly managed fisheries in the world. GROUP LT Partners are at the forefront of this management with a sophisticated harvesting and farming programme which ensures the longevity of the species. Under a strict quota management system, a specific number of wild fish are captured between December and March each year and are kept live in an open water culture environment, where they are fed a natural diet of pilchards, mackerel and squid for approximately 6 months.

GROUP LT Partners harvest the fish under perfect conditions, utilising the latest technology and employing traditional Japanese “ike-jime” harvesting methods. This minimizes stress on the fish throughout harvesting, delivering maximum shelflife and culinary excellence.
We have achieved a world first in closing the life cycle of the Southern Bluefin Tuna and will soon be growing these amazing fish from hatchery reared stock truly making it the world’s most sustainable luxury food.

Growing Conditions
The Southern Bluefin Tuna are farm ranched in an open water culture environment over 6 – 9 months. The pens enjoy high flows of oxygen and nutrient rich, cold waters. Minimal stocking densities and stringent farm management practices ensure the highest level of animal welfare is maintained.

Sustainability
The Australian Southern Bluefin Tuna Fishery is one of the most closely managed fisheries in the world. Caught in the wild between December and March, a tightly controlled annual harvest has been held at the same level for nearly 20 years. The exciting advances in the industry are reflected in the recovering wild stocks. 

Feed
The tuna are fed a diet comprising of all natural, locally sourced components, including pilchards, mackerel and squid, all sourced from sustainable fisheries.

is pale white in colou with a full,
rich and sweet flavour and soft,
buttery texture.

Chutoro -  is plae pink/white in
colour, with a slightly fuller flavour 
and firmer texture

Akami - is deep rich red in colour
with a firm texture.
